The Bourgogne Côte d’Or appellation was created in 2017. This is the 14th geographical name of the Burgundy appellation
The vineyard of Burgundy Côte d’Or is presented in a diagonal oriented from the northeast to the southwest, organized in a succession of slopes located between 200 and 450 meters above sea level, with a temperate climate, with a warm and dry undertone. . The vineyard is mainly exposed to the south-east and occupies the foothills of the Côte, on land composed of old alluvium: scree and clayey colluvium, clayey silt and gravels at the exit of the valleys.
The vines between 30 and 45 years old are cultivated using sustainable methods.

The vineyard is ideally exposed to the rays of the sun, on the rising side between south-east and east.

Terroirs and vinification
The rich soils are composed of limestone and clay and are well drained thanks to small pebbles. The earth is in places reddened by iron oxide.
The vines are on average 45 years old and are cultivated with reasoned agriculture.
The wines are aged for 10 to 12 months in barrels with a proportion of 20% new barrels.

Food and wine pairing
Thanks to solid and dense tannins, the wines of Pommard go perfectly with wild meats, whether it is game with hair or feathers, grilled, roasted or braised, beef, lamb or poultry. . The association with cheeses will also be assured with Burgundian cheeses such as Epoisses, Langres or Comté.

Keeping and serving temperature
Serve between 14 and 16 ° C
Keeping: 10-15 years
