Terroirs and vinification<\/strong>
\nOn an exceptional terroir at the foot of the combe de Lavaux, the communal appellation of Gevrey-Chambertin exists exclusively in red, on pinot noir: rich soils, composed of limestone (calcic brown and brown), marl covered with scree and gravels rich in fossil shells bringing strength and firmness to the wines. The vineyard is ideally exposed to the rays of the sun, on the rising side between south-east and east.
\nVines, on average 40 years old, ideally exposed to the east and south-east and are cultivated in Reasoned Agriculture.
\nAging in wood over 15 months, with 20% new barrels.<\/p>\n

Food and wine pairing<\/strong>
\nSolid, velvety wines reinforced by powerful tannins that go wonderfully with game meats and red meats braised or in sauce. Also in perfect association with certain fish such as pike perch or tuna, or with Burgundian cheeses such as \u00e9poisses or c\u00eeteaux.<\/p>\n
