Terroirs and vinification
This Pinot comes from the vines of the Côte de Nuits (towards Marsannay and Couchey) where the Pinot noir expresses all these aromas, its fruit and its terroir. The vines between 30 and 45 years old are cultivated organically.
A traditional red vinification in large containers (demis-muids) with an aging of 6 to 12 months in barrels with a proportion of 15% new barrels.
Food and wine pairing
This Pinot Noir goes well with delicate and aromatic dishes, but simple: salads, savory pies and pies, poultry. It also goes well with fish, veal or cooked cheeses.
