Terroirs and vinification
The vineyard is on average 40 years old and is cultivated in sustainable agriculture. Yields are low (35 hL / ha).
Following a traditional vinification in red Burgundy, the wines are aged in oak barrels for 15 months with 20% new oak.
Food and wine pairing
Game (duck, venison), rib of beef or lamb (braised or in brown sauce). Fish: tuna in red wine sauce. Perfect with tasty cow’s milk cheeses (Époisses, Ami du Chambertin or Cîteaux).
