Terroirs and vinification
On the very particular terroir of Chablis, this appellation of almost 800 hectares is spread over 40 climates. Montée de Tonnerre is one of the main ones.
The relief along the Serein river, the Kimmeridgian soil and the only grape variety used, Chardonnay, lead to this unique and yet copied wine whose name has been used wrongly all over the planet.
Both for fermentation and for aging, Chablis 1er Cru Montmains does not see barrels: stainless steel vats only to reveal the fruit and the very particular terroir of Chablis.
Food and wine pairing
The aromatic complexity of this 1er Cru offers great possibilities for pairing with quality dishes, especially hot oysters or marinated fish. Being a mineral wine, it will go perfectly with poultry or veal.
