Terroirs and vinification
This cuvée is a blend of plots classified as 1er cru which is located near Chablis, on the southwest side. The soil is clay-limestone with a Kimmeridgian pebble subsoil.
The vines, 35 years old on average, are cultivated in sustainable cultivation with double Guyot pruning and mechanical plowing.
A slow and gentle pressing is carried out in order to preserve the fruit and the freshness. Alcoholic fermentation takes place in temperature-controlled stainless steel vats and is followed by a 12-month aging on lees in stainless steel vats before bottling. Malolactic fermentation also takes place 100% in stainless steel tanks.

To consume with dishes as diverse as they are varied: hot oysters, fish in sauce, roasted poultry, veal blanquette, andouillettes, snails, cheeses.
