Terroirs and vinification
The Solutré and Vergisson vines are based on limestone soils with very hard fossil corals. The vineyards are on fairly steep slopes, exposed to the east and south-east between 200 and 300m above sea level. The cuvée called the Trilogy of Terroirs is a blend, reproduced year after year, vintage after vintage from three same selected plots.
On vines with an average age of 70 years, yields on these plots are very limited, reaching between 25 and 30 hl per hectare. The work of the vines is here carried out in reasoned culture with the greatest respect for the soil and the environment.
Food and wine pairing
The minerality and freshness of this wine allow it to combine with noble crustaceans and also foie gras. White meat and poultry go well with this Pouilly-Fuissé. The acidity-mellow balance and the touch of minerality will allow exotic dishes (Asian, wok, sweet-salty pairings) to find a real quality accompaniment here.
